I make two encrypted backups just before an upgrade or restore for good measure and then turn it off.

They need to provide a How To with a new iOS, whats new, what has changed, essentially a Quick Setup Guide. In reality, what I find is people and websites find this stuff over time. I just posted example where users may be using cellular at home, even though there wifi is working fine.

So, next time we could set to encrypted, backup, restore, turn encrypted off?

If you set up a new iOS device from an encrypted backup, your settings are preserved. Otherwise, default settings are installed. Info on how to delete iCloud backups:

I sure know they were changed without input. I have never backed up to the cloud. I got a new 6s plus restored from my local backup and all went well. I noticed my icloud storage was way up. Without my input the 6s was set to backup to the cloud. None of my other devices were ever set to back up to the cloud. Now I have to research how to delete an icloud backup. Ugh
