I don't think Sync Photos relates to the camera roll.

If memory serves me correctly, you connect your phone to your computer and let iTunes open. A button will show up on the third line down, near the right side, that is labeled iphone. Click on that button and everything on the phone will show up.
On the third line down you should see the name of your phone. On that line near the right side there will be a button called Photos. Click on that button.
Near the top left corner there will be a box called Sync Photos. Uncheck that box and do a sync. The photos should be gone from the phone.
