But what I don't understand is why it is using cellular data when it is connected to wife? Shouldn't it use wifi to get those pictures and texts if it is connected to wifi? Also, shouldn't it use wifi for whatever else it is using data for while I am asleep at night and doing nothing with the phone? That is my concern. It is using data when connected to wifi?

That's actually pretty good.
Settings — Cellular — "Use Cellular Data for"
You can turn On, or Off, the use of cellular data by and and all Apps on your machine. It also shows how much each has used since the last reset.
On mine, most have used 0 B; several have used under 100 kB; the few over 1 MB are things like Weather, Safari, Maps, Mail — all of which I use when I'm out away from Wifi.
