Where in Contacts do you enter the birthday?

Contacts > Card > Add Field > Edit Template (add any others you would like to use).  

This is OS X 10.8; it might differ in 10.9, and obviously a Windows user can help with Outlook.

Or, since we are talking iPhones here, display the contact in question on the iPhone, tap Edit on the top line, and scroll down the page to the entry labeled "Add Birthday".
