>>> After updating my iPhone 6+ and my iPad Pro Apple wanted me to set up Apple Pay.

Of my purchase, I pay for as many as possible using Apple Pay. I find it faster and more convenient, and it is more secure than credit cards.
> I don't like being forced into things, thoughts and actions. It rubs me the wrong way , excuse the cliches, I dig in my heels.
While Apple may want you to use Apple Pay, no one is forced into it.
> I don't want to do something stupid or inadvertant which results in an unintended charge.
Easy to avoid.
> It has been awhile but last time I looked there were not many places that accepted Apple Pay.
All but one of the 6 supermarket I go to accept it; McDonalds, Chick-Fil-A, 1 auto-parts store I know of, 1 gas station I know of (and probably more to come soon).
Apple, of course, and many online "e-tailers".
