First you said "payments are limited to £30" – they are NOT.
You merely have to sign for larger purchases, at least using credit cards.

They *are* limited if you want the convenience of NFC. If you need to sign, much of that speed and convenience are lost. In any case, the one time I tried using my iPhone at the supermarket for a > £30 payment, I wasn't even offered the option of signing: it simply wouldn't accept it. Perhaps this is still a "work in progress" and I should try again.
