And you can still use Internet, if you are able to get paid or free wifi in hotels, coffee shops or airports. 

But in some countries, to use free public wifi as in airport, the system sends a password to your GSM phone number to use wifi so you may need to have a working sim to receive SMS.

There is no "chip with internet".
Internet connectivity comes with an iPhone's cellular connection.
You can, of course, turn Cellular Data off and on in Settings on the iPhone.
