Unless you go out of your way specifically to change the name of an older backup, and then create a newer one, iTunes (and I think iCloud) overwrite the old one with the more recent one.
The old backups from different phones were still there until I deleted them. Only the backups from the same phone perhaps get overwritten. Let me check again.
When one gets a new device, and want to transfer as much as possible from an old device, the procedure is to make a current backup from the old device, and restore that to the new device. Once that is done, and the new device is working properly, the next step is to make a current backup of the *new* device, and sometime later, delete the old device's backup.
