iTunes updates the current backup, in place, every time that you do a new backup to the computer.
By going to iTunes/preferences/devices you can see the current backups.
On a Mac, you can "archive" the current backup by right-clicking it and choosing Archive or delete it by choosing delete.
When you archive the current backup, it is frozen in time and the next backup that you take will be a new file.
Or something very close to that.
