Not sure if you are using a Mac, but whenever I want to keep a backup I navigate to the folder on my Pc where the backup is located and copy it to a different folder. You can then keep it as long as you want. Backups are located in a pc at your Username\app data\roaming\apple computer\mobilecomputing\backup. In backup there will be a backup for each iOS device you sync to that computer. Copy the current backup so that your next syncing doesn't take a long time to backup everything again.
