As the Apple info you quoted states, when you disconnect your ethernet cable, you switch the Apple TV to wireless mode. If you haven't set up wireless on the Apple TV, it won't know how to connect, or to what network.
I just moved from the 2nd-generation Apple TV to the 3rd-generation, and did all the set-up wirelessly.
