Also, there is a way to Hide apps you will never use again. You know the ones you tried and hate. Go to your Account in iTunes > Purchased > Edit and select Hide.
I'm writing that from memory, but that should be close enough. You will not be bothered in iTunes to keep it up to date there either.

That method *does* work, but it is unnecessary to go that far.
Do not *automatically* iTunes-sync your iPhone on connection to your computer, and remove the app from the list, in iTunes, of apps to be synced to your iPhone when you do so manually.
