I had the good sense not to upgrade my iPhone 5 and instead try it on my iPhone 4s. Not liking it I've quickly ordered another iPhone 5 which still ships with iOS 6 to replace the 4s.

I doubt very highly that you will be able to return to iOS 6.
As to apps not working, did you check to see if they had been updated for iOS 7 ?
Probably all you need to do is update the apps.
