Did you also see in Accessibility there is an increase contrast? It does not do much, and it is sad we have to resort to what was once needed only for the few.
Please start sending feedback to Apple. Every time you find a new problem or issue, send another.

To name just two. On the keyboard is probably because of the thin font and that doesn't seem to selectable (unfortunately).
I've tried making the screen brighter and making email fonts larger and bold. To both of our eyes, this doesn't really increase contrast and it might to others.
Ideas are invited!
