You can not save it as an open document.  You can not save it on another device once you open it on your Mac from a POP acct.  Once it it opened on one device it removes it from the server.

If you had an app that could open a Word doc on your phone you could save the doc to that. 

Or from your Mac, Forward a copy to the same acct and open it on your iPhone and try to save the email on the phone or move it to a new folder you make. 

Or Copy all the text to an email and save the email on your phone. 

Or open your iCloud acct and Copy the Word doc into a Page doc, then access that from the phone.

But you can not save a Word doc, opened in Mail, on your phone.

As far as I can tell, the iPhone opens "doc" attachments without me having to install New Year particular software.

Once it's open, I want to save it.

Unlike my study computer which offers SAVE AS… , holding my finger on the 'doc' file icon does NOT offer SAVE AS… .
