Subject line is still in the MESSAGE settings, under SMS/MMS! This is only useful if you send an MMS, but messages will go through to both sms or mms if it is turned OFF like mine!  If you trying to turned it ON you cannot send a simple txt with a subject line  to an old phone (not smart phone).

Look in the area where you type the message. When you put in the person's name to set the destination phone number it will say iMessage in faint print if it will be sent as an iMessage and Text Message if it will be sent as a regular message.
