For example, if I don't use podcasts, turn it off and don't have to look at that feature or if I don't listen to music, I should be able to turn off the music portion and not have to look at it. I can do some of that on the iPhone/iPad. Can we do that in iTunes on the computer?

On my Mac, in iTunes Preferences, I can un-check the box by Podcasts, and the podcast listing on the left pane of iTunes goes away.
What did you want to do beyond this?
On my iPhone, in Music, up until now I had Podcasts on the bottom of the screen. Since I now have the Podcasts App I tapped "More..." then "Edit", and dragged something else down there to replace it, and now Podcasts is no longer visible as a choice there.
