All iMacs are quad-core i5 or i7 now, with discreet graphics. For Aperture, Photoshop and general computing, even the entry-level iMac is killer.

The model of Mac won't matter much for Wi-Fi. Though I'd recommend an Ethernet connected NAS drive instead of Wi-Fi, for speed and reliability. But that's up to you.

Even the Mac mini can support multiple displays via Thunderbolt. The more powerful graphics systems in the iMac will have no problem.

Btw, I'd opt for the 27" iMac versus the 21", but again, that's me.

I don't know that I'd spend on Apple's Superdrive, since it uses the less-reliable slot loading mechanism that I've never found reliable. But I would definitely budget for an external USB 2 or 3 DVD-ROM or BD-ROM drive for installers, other photographers who might share files via DVD-R, etc. The optical disc is dying, especially for those who have a fast Internet connection, but for us media types, it's still reality right now. Luckily, this is inexpensive.

I haven't heard any horror stories yet about the new Fusion drive, and it can be a real speed booster. It's not cheap, though. If I had the funds, I'd go for it.
