I have had it happen when trying to update over 3G (I have unlimited data from Sprint, so overages are not a problem) if the connection is less than perfect. My solution is to connect to iTunes, go into the apps section of my iPhone's page, and tell it to update the app on the list. Then when I sync, the app is updated from the computer and the problem is corrected.
