I travel internationally a lot. Here is what works best for me.
Do not neglect the comment above about unlocking your phone. You CANNOT get that done outside the US. Since you have a new phone it is almost certainly locked to your current network. Only SIMs from your current network will work. Period. You need to put on your best party manners and call support for your cellular company, explain that you are very happy, have no plans to leave, but have foreign travel coming up and would like to be unlocked in order to use a local SIM. Depending on the company they may or may not help you. You have the option of buying an unlock code from the Internet but that may violate your contract with your carrier and may affect your warranty with Apple.

You didn't say which carrier you use. That makes a difference. The good news is that all iPhones have GSM radios, even the CDMA phones (Verizon and Sprint). Before you leave add international dialing to your account. In Settings turn off International Data Roaming. OFF. You don't want a bunch of apps trying to "phone home" to cost you a lot of money. Your phone will work from the moment you land although calls will not be inexpensive.
WiFi calling and iMessage will work great. Always look for WiFi before making a call.

Remember that a local SIM will come with a local phone number and calls to your US number will roll to voicemail. iMessages (the blue ones) will come through. SMS texts (the green ones) will not except to the local number.
I use AT&T with an international add-on that I turn on and off as needed. I swap to a local SIM anywhere I will be for more than a couple of days. I tape my "home" AT&T SIM into the card that my local SIM came with and swap back at an appropriate time (at sea or in the air). Remember to travel with an ejection tool. Keep a couple of paper clips in your toiletry bag.
It is always best to power your phone off when changing SIMs. You don't have to but you may have to reboot/reset anyway to get everything to work so why not?
