I had the same question as you about iPhone 6 vs iPhone 6 Plus so I went to the Apple Store and tried out both.  I found that I really liked the larger screen and feel that in the near future developers will figure out how to take full advantage of the larger screen and we'll get some neat apps. So I ordered an iPhone 6 Plus. I'll get it right after Thanksgiving.

I upgraded my 4s to IOS 8.1. No problems at all. Works great so far. I was nervous about hitting "Download and Install" but couldn't help myself. Seems fine to me. I keep meaning to upgrade my iPhone but just haven't "gotten around to it" yet. I keep meaning to. I will get a 6+ I believe and still keep this phone. ATT has no contract plans now and I went month to month. It cut my bill almost in half. Which is better-6 or 6+? I still love my old 4s and still have my even older 4. I "mean't" to upgrade to a 5s but somehow never "got around to it". I am determined to upgrade now. Really I am. I swear it. Anyway all the stuff about not upgrading to IOS 8.1 on a 4s seems like so much piffle to me now. I haven't had a single crash and all works just fine.
