I have 1 iPhone (5S), 1 iPad (4th-gen) and 1 MBPro (late-2013), running iOS 8.1 and Yosemite. I have been switching over from using Dropbox and Evernote to doing much of those things with Notes and iCloud Drive, and for me, Notes has been a *very* reliable part of the equation. I would double-check all the various check-boxes in Setting on the iDevices (iCloud Drive, Notes, …). In fact the only thing I have turned OFF is Photos (waiting to come out of beta). And be sure your device(s) are logged in to iCloud. (I find mine get logged out – certainly if I need to re-boot, but also unpredictably at other times). Similarly double-check the comparable settings on the Yosemite Mac. Also check that the notes are not unexpectedly going to the wrong folder on the Mac.
