1. Start a new message, typing in the beginning of the recipient's name.

2. When the wrong name pops up, tap on the circled "i" next to that name in the list.

3. Scroll down the new page and tap on "Remove From Recents".

I  was trying to keep my question uncomplicated but I do need to give more information.

These contacts I am trying to remove are NOT in my main contacts list on my desktop computer, the contact app in setting on my iPhone appears to be empty!

So I do not understand where gmail is getting them from.

Try going into contacts on you main screen if you haven't moved that app around. Go to the contact you want to delete, choose edit at the top right and then scroll down to where it says delete contact....

Because when I compose a new email I put the 1st letter of the person I want to contact. 

But this brings up quite a few contacts I would like to remove.
