Thanks to everyone for their replies - my new phone is on its way and I'm excited!

Can anyone tell me why I might have wanted the X instead of the 8?

Backup and restore is still in iTunes just like always. If you backup to iCloud with the password option, your restore will retain the passwords stored in your phone.
