[apple-iphone] Security while traveling abroad

I have a friend, an 80 year old woman, who will be taking an extended trip this spring. Among her stops are a number of cities across Russia via train. On the heels of much of the press coverage of cyber crimes during the Olympics I am concerned about cyber security of her iPhone and/or iPad -- and more specifically any information contained therein. She insists on taking an iDevice so she can be connected with email, etc.

I've been wondering about some version of wiping her phone of everything except one email address or some other minimal point of connection before she goes. Then upon return, resetting the device with backup from her computer. I am quite worried that she will expose herself to a great deal of hacking and I'd like to minimize the risk as much as possible.
She counts on me for a lot of tech support and information but seems pretty insistent on having her web connection.
Any suggestions from the wealth of experience and knowledge on this group?

Thanks in advance,

John
