I am having the same problem and so is my DH, although his doesn't happen as frequently. Since mine was doing this everyday several times a day I took it to the apple store and had it replaced. The new one still does it just not as frequently. I would try a restore. If that doesn't fix it then I would take it to the apple store.
Also, if you wait a minute after the logo appears it will go away on its own and you will be back to normal.

In the last few weeks my phone will occasionally jump to the Apple logo when I open it with the home button. When this happens I have to press the power key on top of phone a couple times to get the phone to open. I have tried closing everything from the apps bar, but this does not have any effect.
