The timing of your post and the release of iOS 7.0.6, made me a little concerned. It seems to be narrowed down to the 5S, which I don't have. To help narrow it down some more, which carrier model, AT&T or Verizon are you using?
Since the 5S is new, have you called AppleCare or taken it in to an Apple Store? ( I know not every one has one close by.)

I try to keep my OS up-to-date so the issue was happening on 7.0.4 or .5. I haven's seen it yet on .6 since I updated Saturday afternoon. I couldn't narrow it down to an app either. It seemed to happen randomly. I found it to be mostly an annoyance. It didn't hijack your phone for a minute or more as a full reboot would do, rather just a couple seconds while the screen went black and the apple logo appeared and then it was ready to use again.
