Welcome, Hike.
When you want to post a question, you start a new email with a new subject line, so you don't steal someone else's thread. This one is pretty much a general thread, but etiquette still says start a new one.
Besides not loosing your questions in a possible huge unrelated thread, it also makes it easier for those trying to help you find it and a new subject line may draw better attention to your issue.
Give us some information as to your hardware, OS. For both of these questions, you need to tell us about your computer and it's OS.
Your question about iTunes is too general, what specifically are you trying to do?
I can not answer your second question, but I believe it is possible.

hello, live in southern California, 70 years old and just got back from Mexico. Remembered to turn off the Data and cellular data so I don't get charged those outrageous prices for messages and such....
But I have 2 questions.
1. How the heck do you use iTunes....
and 2. Is there a way to find a time stamp in the pictures taken with the iPhone.
Thanks, Hike
