My 10.5" iPad Pro did not upgrade from iOS 11.x to 12.0, until I had Reset it (to remove it from the beta-testing program) and Restored a Back-up.
Then it wouldn't see or show iOS 12.0.1.
I was clueless, but an issue with an app just led me to Settings > General > Profiles. There I noticed a Beta profile.
I removed that, then restarted the device, and now the update did show. It will install after sending this message.
