The XS Max doesn't sync with iTunes? You therefore can't sync any media (music, photos, podcasts, ebooks) to it? Can this be true?

The same happens on all my devices.The sync to the MacBook however allows each of my 26,000 photographs to appear on my phones. This is still possible with iOS 11 which runs on my iPhone 7. However the new XS max doesn't sync with iTunes and calls for an upgrade in the Mac OS which I'm unwilling to go for as the super user-friendly photo management ap iPhoto will cease to run and I'll be forced to use the ap Photos which has replaced it.
