Open Image Capture on your Mac with your iPhone connected. At the bottom of the left pane in Image Capture, select which — if any — application you wish to open when you connect the iPhone in future.

I just upgraded to El Capitan on my Mac. Now, when I connect my iPhone to the computer, Photos starts up. How do I stop that? iOS is 9.3.5. iTunes is 12.5. something I can't tell as the About iTunes window scrolls the information too fast.
