Sleep tracking is not a built-in function on the Apple Watch. But there are MANY 3rd-party apps to do so; just do a search in the App Store.
Some people get a true allergic reaction to nickel (the metal), and there is some in the stainless steel watch. Much less in the aluminum. More common is a local irritation from the sweat and dead skin cells that can accumulate under the watch.
I wear my watch almost every night. I take it off to charge in the evening while I'm sitting at my computer, and wash my wrist before bed when I'm washing my hands and face and brushing my teeth. Then put the watch on before I get in bed, and turn on the sleep tracker.
