I see at least these possibilities for backing up:
1)  Consider increasing your iCloud storage plan. Costs money.
2)  Back up your iPhone to a desktop computer (one with iTunes installed), then have that computer backed up, entirely or partially, to whatever you trust.
3)  Consider purchasing some kind of removable storage for your devices. There are several approaches, but I fell for the Lightning microSD-card reader by Lexar, <http://www.lexar.com/products/card-readers/Lexar-microSD-Reader.html#SKU=LRWMLBNL>. And some microSD-cards, obviously. You could back up these in turn.

(Note that I'm with the Dutch App Store.)
This app offers automatic back-ups of Contacts and Photos.

Me, I automatically back up my eight iOS devices to iCloud on a 200GB plan. I automatically back up my Macs to an
   AirPort Time Capsule - 3 TB

And I manually back up my other computers to an identical pair of external hard disks.

I do use microSD-cards, currently for temporary storage and data exchange. Like among my Android, iOS, OS X and Windows systems and cameras (action, video, DSLR). Most devices accept 128GB cards, but my older DSLR and video cameras can handle merely 32GB. (May be a matter of the file systems involved.)

My iCloud says not enough room to backup, I have been afraid to get the update. I am scared to loose my info! Lol
We just flooded in Louisiana and we are in turmoil and I just can't loose data lol .

Kathy, Contacts are saved to your iCloud account so there is no need to print them. Also, If you back up to iCloud with a password, all your settings and passwords are saved too.
