What, exactly, do you mean when you say "syncs"?
That you plug the iPhone in to the computer with the Lightning cable?
What else?
In iTunes, with the iPhone connected, and clicking on the iPhone icon to display the iPhone sync screen, click on "Summary" in the left pane. Then scroll to the bottom of the right pane ("Options"). Which options there are checked?
In iTunes Preferences — Devices, is "Prevent iPods, iPhones, and iPads from syncing automatically" checked?
I have that setting checked. I want syncing to happen only when I tell iTunes to do that.
That said, I am always uncertain if new apps purchased on the device will sync, so to be sure, I go to the Files menu — Devices, and tell it to "Transfer Purchases from…"
You might also want to have a look at iTunes — Preferences — Store and think about whether you want to check any choices under "Automatic Downloads".
On the iPhone, there are similar choices under Settings — App and iTune Stores.
