Sorry, I should've been more helpful.

First of all, I would start iTunes without the iPhone connected and select
Preferences > Devices > Prevent iPods, etc., from syncing automatically.
This makes things easier as you won't be rushed into anything.

When an iPod/iPhone/iPad is connected, it appears in the left column under
Devices. When you click on the iPhone, a row of tabs appears across the top
of the iTunes main window.

The default tab is Summary. At the bottom is a coloured bar showing storage
used by different file types. I suggest you do *not* select Sync only
checked songs and videos. It will only create more work. It has nothing to
do with iTunes Match. You can Manually manage music and videos but I prefer
to do this using playlists.

Click on the Music tab. This is where you control which music is synced
(copied) to the iPhone. If you don't have much, you might be able to select
Entire Music Library; I use Selected playlists, etc. I have about 300 GB of
music in iTunes so I have to select it, and I do this using Smart Playlists
(let me know if you want help with those). You can also choose to
Automatically fill free space with songs.

When you've made your choice, click on Sync at the bottom right. This will
perform a backup before syncing music. Progress is shown in the top bar of
the iTunes window. When it's finished you might want to click on Summary
again and see how much space has been used.

Eject the iPhone and disconnect the cable.
