This option is dictated by your import setting. If that is set to MP3, you
will see Create MP3 version; if it's set to Lossless, you'll see Create
Lossless version, etc.

(I can't understand why Apple have never included a dropdown menu there to
allow you to choose the format without having to change your import
setting.)
