You don't have to go to apple. There are loads of people online who will help you. Just be sure to check references! Most backup programs will guide you through the process step by step and offer all the help you need if you buy their program.

My main worry are the Notes. My wife had her purse stolen recently with her iPhone in it, and she is feeling the pain. 
Is there a simple way of doing this, without having to visit the iPhone store (and I may have to try that)?

I dismissed the  idea, but not broadly. As I said in the first sentence, "and to each their own decision." When was the last time you read a TOS all the way through, or even started to read one? I did not address the issue of a back up at any point, as that should be a given.

I once had a hard drive die.  That did not stop me from using other hard drives.  That a storage service that you used shut down unexpectedly and with terrible results for you should not mean that no one should trust another storage service.  I did not recommend that the OP only use the online storage solution, but instead I suggested that it could be used IN ADDITION to the thumb drive.  

Anyone who copies whatever files to another media, such as a thumb drive or to an online storage service and then deletes the original files does not have a backup.  One copy of a file is not a backup.  A second copy of the file is backup.  A third copy of the file stored off site, such as on an online storage service provides much greater file storage.

I offered a suggestion on how the OP could accomplish what was requested and offered 2 other storage solutions for the OP to consider.

You gave a one off reason to avoid storage services but offered no suggestion on what the OP should do.

If you have a Mac, you can import the photos from the iPhone to the Mac using the Photos app.  Once in the Mac I believe you can use File, Export Photos from the Photos app to copy them where you want them such as to a Thumb Drive.

However you get the files on the Thumb Drive, do you plan to delete them from the iPhone and the Mac (or PC)?  If so the Thumb Drive will be the only place with the photos.  These portable drives are easy to lose and are not intended for long term storage without a backup..

However you store your photos I suggest you consider Google Photos which will store an unlimited number of photos up to 16 MP for free.  Pictures greater than 16 MP will be downsized.  You can download a Google Photos app onto your iPhone and after setting it up, it will automatically copy your photos to Google Photos. 

Amazon Photos allows unlimited photo storage for free for Amazon Prime members.  I do not believe there are MP limitations.  There is an Amazon Photos app that works like the Google Photos app.

I use both for the security of having 2 automatic backups of all the photos on my iPhone.
