My method would be to back up the 5s via iTunes using 'encrypt this backup' because that will preserve your settings, folders, etc.  You can then use that backup to set up your new phone.  I would then erase the 5s (Settings>General>Erase All Content and Settings) and then set it up as new for your DH.
