[apple-iphone] Upgrade questions

 

I plan to upgrade from 5S to 7 then give the 5S to my DH who currently uses an ancient flip phone.

While we currently use ATT for our phones and iPad, I plan to buy the new phone direct from Apple so I will be able to switch out SIM cards if we travel abroad rather than get stuck paying ATT's exorbitant roaming fees.

will the 5S be automatically erased when my husband's new SIM card is installed? I'd like to just remove the apps he won't need rather than erase the whole thing. He is not a techie so it will be up to me to get a simple system set up.

If I back up the 5S to iTunes before we make the switch, will I then be able to move everything to the 7 from the backup?

I've never done anything like this before and need guidance. I've checked Apple online but haven't been able to figure out what procedure would work best. I'd be grateful for any tips, caveats or website recommendations.
