I've had a similar problem but pinned it down to one song that wouldn't sync which hung the whole process.  It would get to that one song and then hang.  I took it off the playlist and everything else synced just fine.

Phone and computer are up todate for their OS. MBPro El Cap. Since OS 10 have not been able to sync music and podcasts to phone. Yesterday cleaned up years of iTunes, restored my phone to factory reloaded iCloud and tried to sync and it wouldn't. Dragged and dropped and it stalled. Phone then got stuck on spinning wheel.
