Hi Peg,

First you need to get the iPhone 5 unlocked if it is on AT&T.  If Verizon I think you won't need to unlock it for GSM coverage.  If Sprint or T-mobile - I'm not sure if both unlock the phones so you may be out of luck.

I traveled in Spain last year and it was pretty easy - just had to find a carrier store and get a pre-paid SIM card with both data and phone plan.  Did it on an old iPhone 3GS and an iPad Air.  The biggest difficulty is finding the store with English speaking clerks.  Depending on country you want to go to this may not be an issue.

I don't think you can find one carrier with coverage across all of Europe so if you are planning on going to multiple countries you will likely need to swap SIMs when you go to each country.  The airports do have SIM sales but they are much more expensive than doing it away from airport.
