In addition to the previous replies:
I use Aperture, not iPhoto, but when I periodically back up my iPhone images on my Mac, I connect by cable and run Image Capture (included with the MacOS), and use that to capture and store the images.
It uses its own database and is independent of the other imaging software on the Mac, and I use it ONLY for this purpose, so I never have any doubts or questions about inadvertent deletions.
