Nick, what you're seeing is the "live" feature that became available with the 7 series, I think. It takes a few seconds of live video along with the actual photo.. It is kind of annoying at times. To turn it off, when on the camera app, at the top of the screen, you will see 4 icons. Tap the second icon from the left. A "strike out" line should go through the icon, and you will see "LIVE OFF" for a few seconds.

Newish iPhone 8 plus.
Every time I take a still photo, the camera is recording a few seconds of movie of the same scene. The camera is set to photo, and not to video, and the movie does not appear on the iphone's Camera Roll, but it is in the camera memory on connection to my PC and can be downloaded - both the still and the movie (both with the same sequential number after the IMG_xxx) are in the memory from just one exposure click. This is bizarre
