Syncing is normally one way, iTunes -> iPhone, so you are expected to copy your iTunes library from your old computer to your new one (or, of course, from a recent backup. Don't you have any backups?).

There are, however, apps and methods for copying media from an iPhone to a computer. If you have a Mac the easiest is probably Senuti, but there are others.
