Bob, that is the built-in auto-correction feature, not a text expander.
If you type in gcc it will suggest FCC, not change it to Gainesville Cycling Club. If you type (all caps) GCC the iPhone auto-correction recognizes it as an acronym and leaves it alone. Double tapping the shift key to make it cap lock, and turns the key blue.
You are correct, if you type gcc, and do not want to use the suggestion, then you tap the red x, and it will leave what you typed.
Auto-correct drives me crazy. For years, I have used a form of tele-type short hand, i.e. ctg chz for cottage cheese. If I am not watchful, I find it is hard to read my list when I get to the market, not to mention what it does to text messages.
