What I do all the time is:
Copy all photos from the iphone to a folder on my pc using windows explorer...separate them in subfolders as I like and import then back to iphone using itunes.
You can select the folder/subfolders to import in itunes clicking in your iphone on the left and then selecting "photos" on the top menu. Select them "Sync Photos from" then point to your picture folder on your HD and then select "All folders" in itunes and you can also select "include videos" and then sync. They will go on folders on iphone.

I need to organize my photos into folders, move additional photos to existing folders, and back them up on my PC. I cannot see a way to organize them in iTunes. If this is possible in iTunes, might someone direct me to instructions on this. If there is software that supports this, or an app for the phone, I would like to know about it too.
