Deleted photos move to a Recently Deleted album and are automatically permanently deleted after 40 days.  Each photo displays the number of days remaining and can easily be moved if desired.  Arranging photos in albums/folders is a snap.


To get the Photos app back, I think you'll have to start your computer in Recovery mode and reinstall the operating system.  Here's the instruction on doing that:

I did the same here.  Now that I've learned to use Photos effectively, I like it a lot.  As I recall, the learning curve was not particularly steep.
