So I imagine a cranking up "swipe acceleration" so that the entire line of text can be moved with, say, a swipe about as wide as a nickel. The only e-book I've ever downloaded worked this way--I could eat lunch with one hand, and scroll *slightly* with one finger of the other hand. Because it worked so well, I could fly through the pages.

An iPad would be better suited for that type of reading. Yeah, reading books on a iPhone is a real pain. Unfortunately, I don't have the buck to spend on an iPad, no matter how much I would like one.
I have not seen anything like a cursor or swipe acceleration app for the iPhone. I doubt that Apple would allow it as a third party app as it would need to change some of the basics of the iPhone.
The other text size and swiping issues sound to be on the source side of the coding. In other words, the author(s) chose the wrong software to write the text with.
