The setting is not in Mail accounts. Read below.

I don't see signature in the user guide for iOS 5, but if you go back to the user guide for iOS 4.3

"Add a signature to your messages: Choose "Mail, Contacts, Calendars" > Signature, then type a signature."

How he is getting multiple signatures for different accounts is beyond me, as for a non-jailbroken iPhone 3GS running iOS 5.0, you are given only one option to set up a signature that is applied to all your email accounts.

It is possible that this feature was temporarily dropped in iOS 5.0, but that is just a W.A.G. since so many people are not finding it on the iPhone 4S.
