How he is getting multiple signatures for different accounts is beyond me, as for a non-jailbroken iPhone 3GS, you are given only one option to set up a signature that is applied to all your email accounts.
It is possible that this feature was temporarily dropped in iOS 5.0, but that is just a W.A.G.
